Smoky Sweet Heat Ribs with Kinders Brown Sugar Rub & Melinda’s Mango Habanero Sauce

This easy 3-2-1 smoked ribs recipe highlights two star products from Smoke & Spice: Kinders Brown Sugar Rub for caramelized sweetness and Melinda’s Mango Habanero Pepper Sauce for a sticky, sweet-spicy glaze. It’s perfect for Irish BBQs and guaranteed to impress.


Ingredients (Serves 4-6)


For the ribs:


  • 2 racks pork baby back ribs (membrane removed)


  • 4-6 tbsp Kinders Brown Sugar Rub (or any Kinders rub like Buttery Steakhouse or The Blend)


  • Yellow mustard or olive oil (as a binder)

    Apple juice or cider vinegar spray (optional, for spritzing)


For the glaze:


  • 1 bottle Melinda’s Mango Habanero Pepper Sauce (or try their Sweet and Spicy Polynesian or Habanero Honey Mustard)


  • 2-3 tbsp honey or brown sugar


  • 1 tbsp apple cider vinegar


  • Optional: A dash of Kinders Buttery Garlic & Herb Seasoning for extra depth


To serve: Coleslaw, pickles, cornbread, and extra sauce.


Instructions


  1. Prep the ribs (15 mins): Pat ribs dry. Apply a thin layer of mustard or oil. Generously coat both sides with Kinders Brown Sugar Rub. Let them sit for 30-60 minutes (or overnight in the fridge for deeper flavor).


  2. Smoke low & slow (3 hours): Preheat smoker or indirect grill to 225-250°F (107-121°C). Use apple or cherry wood chunks for smoke (available on Smokeandspice.ie). Place ribs bone-side down. Smoke for 3 hours, spritzing with apple juice hourly if desired.


  3. Wrap & tenderize (2 hours): Remove ribs, wrap tightly in foil with a splash of apple juice. Return to smoker for 2 hours.


  4. Glaze & finish (1 hour): Unwrap ribs. Brush generously with the Mango Habanero glaze (mix sauce, honey, and vinegar). Cook unwrapped for another 30-60 minutes until sauce is sticky and ribs reach 195-203°F (90-95°C) internal temp. For extra char, broil or grill directly for 2-3 minutes per side.


  5. Rest & serve: Let ribs rest 10-15 minutes, then slice. Serve with extra warmed sauce.


Total time: ~6 hours (mostly hands-off).
