Ingredients (Serves 4-6)
For the ribs:
2 racks pork baby back ribs (membrane removed)

For the glaze:

Instructions

Smoke low & slow (3 hours): Preheat smoker or indirect grill to 225-250°F (107-121°C). Use apple or cherry wood chunks for smoke (available on Smokeandspice.ie). Place ribs bone-side down. Smoke for 3 hours, spritzing with apple juice hourly if desired.
Wrap & tenderize (2 hours): Remove ribs, wrap tightly in foil with a splash of apple juice. Return to smoker for 2 hours.
Glaze & finish (1 hour): Unwrap ribs. Brush generously with the Mango Habanero glaze (mix sauce, honey, and vinegar). Cook unwrapped for another 30-60 minutes until sauce is sticky and ribs reach 195-203°F (90-95°C) internal temp. For extra char, broil or grill directly for 2-3 minutes per side.
Rest & serve: Let ribs rest 10-15 minutes, then slice. Serve with extra warmed sauce.
